What each ingredient does

Fowl
Provides the meat, which firms and becomes tender during gentle, extended simmering in water.

The step that matters

Keep the water at a simmer, not a boil. Vigorous boiling toughens the meat's proteins and churns up scum into the liquid. A gentle simmer cooks the fowl evenly and keeps the broth clearer, so skimming is easier.
