Boiled Puddings

Ingredients

Directions

  1. Boil ½ cup water with the thin rind of ½ lemon and 1½ ounces of lump sugar for 10 minutes.

  2. Remove the lemon peel and stir in 1 teaspoon of arrowroot mixed with the strained juice of the lemon.

  3. Add ½ cup of pale French brandy or ⅓ cup of sherry, adjusting the arrowroot if using wine.

  4. For decoration, arrange small leaves of citron rind and split muscatel raisins in a pattern in the mold.

  5. Fill the mold with the pudding mixture after adding 1 egg yolk and steam or boil for 2 hours.
