What each ingredient does

Eggs
Set the custard and bind it into a firm, sliceable texture as they cook.
Milk
Forms the liquid base of the custard and carries the flavour of the almonds and lemon.
Sugar
Adds sweetness and balances the savoury notes of the milk and almonds.
Plum pudding
Lines the mould and provides the main flavour and body of the dish.
