Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Egg yolks bind the mixture, and the whipped white lightens it as it sets.
Dry bread crumbs
Absorb moisture and give the pudding its body.
Stoned raisins
Add sweetness and chewy texture throughout the pudding.

The step that matters

Folding in the stiffly beaten egg white. Stiff egg white traps air, which lightens the mixture. Overmixing knocks that air out and leaves a denser pudding, so fold gently and only until combined.

Swap the orange

How well each one fits the dish's main ingredients (bread, raisin, egg):

  1. Figfits better
  2. Datesfits better
  3. Vanillafits better
  4. Orangethe original

Fit is the average pairing score against bread, raisin, egg. Candidates are from the same food group and used in at least 100 recipes.
