A Good Ground Rice Pudding

Ingredients

Directions

The book says “a very gentle oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Make the custard base

  1. Mix the rice flour with ½ cup of milk until smooth.

  2. Pour this mixture into 1 cup of boiling milk, stirring constantly over low heat for 10 to 12 minutes.

  3. Add the butter, sugar, and salt, stirring until combined.

  4. Remove from heat and stir in the egg yolks, egg whites, lemon rind, and brandy quickly.

Assemble and bake

  1. Prepare a buttered dish with a border of pastry around the edge.

  2. Pour the pudding mixture into the dish and drizzle with clarified butter.

  3. Moisten the pastry with cold water and dust with sugar, using less on the pudding.

  4. Bake in a slow oven at 300°F (150°C) for 45 minutes.

What each ingredient does

Rice flour
Thickens the milk as it cooks, giving the pudding a smooth, set body.
Milk
Forms the liquid base that the rice flour thickens into a creamy mixture.
Butter
Adds richness and a soft, tender texture to the pudding.
Sugar
Sweetens the pudding and helps it brown lightly during baking.
Egg yolks
Enrich the pudding and help it set into a custard-like texture.
Egg whites
Add lightness and help give the baked pudding a softer structure.

The step that matters

Remove from heat and stir in the egg yolks and whites quickly. If the thickened mixture is still hot when the eggs go in, the yolks can scramble and become grainy. Stirring quickly and off the heat keeps the eggs evenly blended into a smooth custard.

Swap the lemon

How well each one fits the dish's main ingredients (rice, milk, butter, sugar, egg, brandy):
