The pairs that carry this dish. Each one is judged two ways: how much aroma chemistry they share, and how many recipes mention both.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Isinglass (gelatin)
Sets the mousse into a firm, wobbly structure as it chills.
Cream
Whipped to soft peaks, it adds air and a light, creamy texture.
Strawberries
Provide the main fruit flavor and moisture for the mousse.
Sugar
Sweetens the strawberry base and balances the tartness of the fruit.
Lemon juice
Adds acidity that brightens the flavor of the strawberries.

The step that matters

Dissolve the isinglass fully before combining. Gelatin must be softened in cold water and fully dissolved in warm liquid; if it stays lumpy or cools too early, it will set in clumps instead of evenly through the mousse.

Flavor stand-ins for the lemon

How well each one fits the dish's main ingredients (sugar, gelatin, milk, cream):

  1. Vanillabetter flavor fit
  2. Strawberrybetter flavor fit
  3. Coconutbetter flavor fit
  4. Lemonthe original

Fit is the average pairing score against sugar, gelatin, milk, cream. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
