  1. Infuse the cream with the lemon rind or rasp the fruit with the sugar.

  2. Dissolve the isinglass in the mixture without boiling, keeping it near simmering.

  3. Stir in the sugar until fully dissolved and the lemon flavor is strong.

  4. Add the additional cream and strain the mixture into a bowl.

Set and mold

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cream
Provides richness and fat, giving the set cream a smooth, soft texture.
Isinglass
Gelatin-like setting agent that firms the cream so it holds its molded shape.
Sugar
Sweetens the cream and helps carry the lemon flavor through the dish.
Lemon juice
Adds acidity and brightness, and thickens the cold cream as it is whisked in.

The step that matters

Dissolve the isinglass without boiling. Isinglass is a gelatin-type setting agent that loses its setting power if overheated. Keeping the mixture just below a boil lets it dissolve fully so the cream sets firmly when cold.

Swap the lemon
