What each ingredient does

Horseradish
Supplies the sharp, pungent heat that is released when the root is grated.
Cream
Its fat softens the sharpness and gives the sauce a smooth, rich texture.
Vinegar
Adds acidity that brightens the flavour and sharpens the sauce's bite.

The step that matters

Heating the sauce gently without boiling. Heat drives off the volatile compounds that give horseradish its pungent bite, so boiling dulls the flavour. Low, gentle heat keeps the sauce sharp and stops the cream from separating.

Swap the horseradish

How well each one fits the dish's main ingredients (cream, vinegar):

  1. Mustardfits about as well
  2. Horseradishthe original
  3. Onionfits about as well
  4. Cucumberfits about as well

Fit is the average pairing score against cream, vinegar. Candidates are from the same food group and used in at least 100 recipes.
