To Roast Ducks

Ingredients

Directions

Prepare the ducks

  1. Remove the heads and necks from the ducks, leaving the feet on.

  2. Hold the ducks in boiling water for a few minutes to loosen the skin, then peel it off.

  3. Wash the inside of the ducks with water and wipe the outsides with a dry cloth.

  4. Stuff the ducks with a mixture of parboiled onions, minced sage, salt, pepper, and butter if desired.

  5. Cut off the pinions at the first joint and truss the feet behind the backs.

Roast and serve

  1. Spit the ducks firmly and roast them at a brisk fire, basting constantly.

  2. When the breasts are plumped and steam draws towards the fire, dish the ducks.

  3. Serve quickly with brown gravy poured around them.

What each ingredient does

Ducks
Provide the main meat, whose fat renders and crisps the skin during roasting.
Parboiled onions
Add moisture and gentle sweetness to the stuffing as they soften inside the birds.
Sage
Adds a savoury, herbal aroma that complements the rich duck meat.
Butter
Adds fat and richness, helping the stuffing taste mellow and moist.

The step that matters

Dish the ducks when the breasts are plumped and steam draws towards the fire. Overcooking dries the meat and toughens it, while the rendered fat and steam signal that the breasts are done and the skin is crisp. Serve promptly, since the skin softens as it cools.

Swap the onion

How well each one fits the dish's main ingredients (sage, pepper, butter):
