What each ingredient does

Floury potatoes
Their starch mashes into a soft, fluffy base that holds the balls together.
Butter
Adds fat for richer flavour and a smoother, more tender texture.
Cream
Adds moisture and richness, keeping the mash soft and easy to shape.
Vermicelli
Its crushed pieces form a crisp coating that browns during frying.

The step that matters

Boil the potatoes until very dry. Excess water dilutes the starch and makes the mash sticky and loose, so the balls may not hold their shape or may turn greasy when fried.

Swap the white pepper

How well each one fits the dish's main ingredients (potato, butter, cream):

  1. Nutmegfits better
  2. Garlicfits better
  3. Parsleyfits better
  4. White pepperthe original
