What each ingredient does

Eggs
Set the custard when heated, giving the pudding its firm, sliceable structure.
Milk
Forms the liquid base of the custard and gives it a soft, creamy texture.
Sugar
Sweetens the custard and adds to its flavour.
Plum pudding
Lines the mould, adding its own fruit and spice flavour and texture to the finished pudding.

The step that matters

Boil gently for 1 hour. Egg custard sets through gentle heat; a hard boil can cause the eggs to curdle and make the texture grainy or watery.
