Baked Tuddings

Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the batter

  1. Preheat the oven to 300°F (150°C).

  2. Cream the butter and sugar together until light and fluffy.

  3. Add the egg yolks one at a time, mixing well after each addition.

  4. Squeeze the juice of the lemon into the mixture and stir.

  5. In a separate bowl, beat the egg whites until stiff peaks form.

  6. Gently fold the egg whites into the butter mixture.

Bake

  1. Pour the mixture into a baking dish lined with thin puff pastry.

  2. Bake for 45 minutes in the oven.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Adds richness and a tender, fine crumb through creaming with sugar.
Sugar
Sweetens the dish and helps create a light, fluffy base when creamed.
Egg yolks
Add richness and help bind the batter into a smooth custard-like texture.
Egg whites
Whipped to stiff peaks, they give the batter lift and an airy structure.
Lemon
Its juice adds acidity and bright flavour that balances the sweetness.

The step that matters

Folding the egg whites. Stiff egg whites hold air that gives the batter lift. Folding gently keeps that air in; stirring or overmixing deflates the foam and leaves a dense result.
