The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Lemon and sugar barely smell alike, yet cooks put them together in 53,532 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Isinglass
Gelling agent that sets the liquid into a firm, wobbly jelly when cooled.
China orange juice
Makes up the liquid base and supplies the main orange flavour.
Sugar
Adds sweetness and balances the tartness of the juice.
Lemon juice
Adds acidity to brighten the flavour and sharpen the orange taste.
Orange rind
Adds aromatic orange oils that scent and flavour the jelly.

The step that matters

Skim the mixture clean without allowing it to boil. Boiling can cloud the liquid and disturb the gel as it forms, so the jelly may look murky and set less cleanly. Gentle heat and careful skimming keep it clear and smooth.
