What each ingredient does
- Coffee
- Provides the main flavour and aroma of the drink.
- Boiling milk
- Adds body and mellows the bitterness of the coffee.
The step that matters
Pour the boiling water evenly and let it drain completely. Coffee grounds that are unevenly wetted or flooded too fast let water channel through and extract unevenly, giving a weak or bitter cup. Letting each addition drain fully keeps the extraction even.
