What each ingredient does

Potatoes
Provide the bulk and body of the fritter, with starch that gives a tender interior.
Egg yolks
Add richness and help bind the batter so it holds together while frying.
Egg whites
Beaten to air, they lighten the batter and help it rise and stay tender.
Cream
Adds moisture and richness, softening the texture of the batter.
Lemon juice
Adds acidity and bright flavour that balances the richness of the eggs.

The step that matters

Fry in hot lard. The batter is loose and airy from beaten whites. In cool fat it spreads and soaks up grease before the outside sets. Hot fat sets the outside quickly, keeping the fritters light and giving a golden crust.

Swap the lemon

The recipe marks lemon as optional. How well each one fits the dish's main ingredients (potato, egg, cream, wine, nutmeg, sugar, orange):

Fit is the average pairing score against potato, egg, cream, wine, nutmeg, sugar, orange. Candidates are from the same food group and used in at least 100 recipes.
