Apple Puffs

Oven, in the book's wordsA quick oven

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Peel the apples and stew them in a stone jar, on a hot hearth, or bake them until soft.

  2. Once cooled, mix the apple pulp with sugar and finely shredded lemon peel, using minimal apple juice.

  3. Roll out the thin pastry dough and fill it with the apple mixture.

  4. Bake in a preheated oven at 400°F (200°C) for about 15 minutes, or until golden brown.

  5. For added flavor, consider adding orange or quince marmalade, cinnamon, or orange flower water.
