Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the cream as they set during gentle scalding, giving a smooth, rich texture.
Cream
Provides richness and body, and carries the leaf flavour through the custard.
Ratafia
Adds sweet almond-like aroma and flavour to the finished cream.
Lemon juice
Adds acidity that brightens the sweetness and balances the rich cream.

The step that matters

Scald the mixture until thick, stirring constantly. Egg yolks set when heated, and they can curdle or scramble if the heat is too high or they are left unstirred. Constant stirring keeps the heat even so the custard thickens smoothly.
