Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lemons
Provide the sharp acidity and fragrant aroma from the peel and juice.
Sugar
Sweetens the cream and balances the sharpness of the lemon juice.
Egg yolks
Thicken the mixture and set it into a smooth cream when gently heated.

The step that matters

Cook gently without boiling. Egg yolks thicken through gentle heat. If the mixture boils or heats too fast, the proteins tighten and curdle, leaving a grainy texture. Stirring constantly over low heat spreads the heat evenly and lets the custard thicken smoothly.

Swap the lemon
