Why it works: Cream and gelatin match in chemistry and in kitchens. They rank in the top 7% of all ingredient pairs, and cooks put them together in 1,628 recipes. Both carry acetic acid, which smells sour, vinegar. The science ↓

Raspberry Cream

Ingredients

Directions

Prepare the raspberry juice

  1. Mash the raspberries gently and let them drain.

  2. Sprinkle a little sugar over the fruit to produce more juice.

Make the cream base

  1. Combine the raspberry juice with the cream and sweeten to taste.

  2. If desired, add milk to the mixture to prevent curdling.

  3. For an alternative, boil the isinglass in 3 pints of mixed cream and milk for 15 minutes until melted.

  4. Strain the mixture through a fine sieve into a bowl.

  5. Once cool, stir in the raspberry juice or syrup until well combined.

  6. Sweeten and add the brandy, whisking until cold.

Set

  1. Pour into a mold and refrigerate until fully set.

What each ingredient does

Raspberries
Provide the main flavour and the juice that colours and perfumes the cream.
Heavy cream
Provides richness and fat, giving the set dessert a smooth, creamy texture.
Isinglass
Gelatin-like setting agent that firms the cream so it holds its shape when chilled.
Sugar
Sweetens the dish and draws juice out of the raspberries.
Milk
Dilutes the cream and, when added, helps prevent curdling.

The step that matters

Add the isinglass mixture to the cream base. Isinglass must be fully dissolved by boiling before it is combined and cooled; if it is not fully melted or is allowed to set prematurely, the cream will not set evenly and may be grainy or lumpy.

Swap the raspberry

How well each one fits the dish's main ingredients (sugar, cream, milk, gelatin, brandy):

  1. Vanillafits better
  2. Strawberryfits about as well
  3. Apricotfits about as well
  4. Raspberrythe original

Fit is the average pairing score against sugar, cream, milk, gelatin, brandy. Candidates are from the same food group and used in at least 100 recipes.
