What each ingredient does

Isinglass
Gelatin-like protein that sets the milk into a firm, wobbly jelly when cooled.
Milk or cream
Forms the body of the dish and gives it a rich, creamy texture.
Loaf sugar
Adds sweetness to balance the flavor of the milk.
Blanched bitter almonds
Contribute a subtle nutty, almond aroma to the flavoring.

The step that matters

Boiling the isinglass in milk or cream. Isinglass must be fully dissolved by heating, then cooled undisturbed, so it can form a firm setting network. Insufficient heating can leave it unset, while overheating or prolonged boiling can weaken its gelling strength and make the texture soft.

Swap the almond

How well each one fits the dish's main ingredients (milk, lemon, cherry, sugar, orange):

  1. Almondthe original
  2. Pistachiofits about as well
  3. Chickpeafits less well
  4. Chestnutfits less well

Fit is the average pairing score against milk, lemon, cherry, sugar, orange. Candidates are from the same food group and used in at least 100 recipes.
