Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oysters
Provide the main flavour of the sauce and tender bites when gently stewed.
Butter
Adds richness and body to the sauce as it melts into the liquid.
Flour
Thickens the sauce when rubbed with butter and stirred into the simmering liquid.
Cream
Adds smoothness and mellows the sauce; optional in this recipe.
Rump steaks
Supply the meat that is broiled and served with the sauce.

The step that matters

Mix in the butter rubbed with flour. Flour must be fully blended into the butter before it goes into hot liquid, and the sauce then needs to boil briefly. Otherwise lumps form and the flour does not thicken evenly.

Swap the mace

How well each one fits the dish's main ingredients (oyster, lemon, cream, butter, flour):

  1. Nutmegfits better
  2. Capersfits better
  3. Parsleyfits better
  4. Macethe original

Fit is the average pairing score against oyster, lemon, cream, butter, flour. Candidates are from the same food group and used in at least 100 recipes.
