What each ingredient does

Dried lentils
Provide the main body of the dish and set into a tender texture when boiled.
Butter
Adds fat and richness, giving the lentils a smooth mouthfeel and a rounded flavour.
Vinegar
Adds acidity that brightens the earthy flavour of the lentils.

The step that matters

Boiling until tender. Dried lentils must cook long enough for their starches to soften fully; undercooked lentils stay firm and chalky, while the acid in vinegar added later can slow softening, so the lentils should be tender before seasoning.
