Parsnip Soup

Ingredients

Directions

  1. Cook lentils for 4 hours until soft.

  2. Strain the soup through a wire sieve, removing the parsley.

  3. Rub the remaining mixture through the sieve into a basin.

  4. Keep a portion of the liquid hot to moisten the pulp as needed.

  5. Boil the soup again before serving, stirring frequently to prevent burning.

  6. Add a few drops of sugar browning for color.

  7. Optionally, stir in a cup of boiling milk before serving.
