What each ingredient does

Veal
Provides the main meat, and browning it first builds savoury flavour in the stew.
Potatoes
Their starch softens during simmering and adds body to the stew.
Onion
Adds aroma and gentle sweetness as it softens in the stock.
Stock
Supplies the liquid that cooks the meat and forms the gravy.
Flour
Its starch thickens the cooking liquid into a smooth gravy.
Vinegar
Adds a sharp acidity that balances the richness of the meat and gravy.

The step that matters

Thicken the gravy with flour, then let it boil. Flour must be fully mixed in and brought to a boil so its starch swells and thickens the gravy. Stopping early leaves lumps and a raw, floury taste.

Swap the potato

How well each one fits the dish's main ingredients (veal, pepper, onion, vinegar, flour, ketchup):

  1. Capsicumfits better
  2. Shallotfits better
  3. Turnipfits better
  4. Potatothe original

Fit is the average pairing score against veal, pepper, onion, vinegar, flour, ketchup. Candidates are from the same food group and used in at least 100 recipes.
