What each ingredient does

Mutton
Provides rich meat flavour and gelatine that gives the broth body as it simmers.
Green peas
Add sweetness and a soft, tender texture to the stew.
Carrots
Add natural sweetness and colour, and soften into the broth as it cooks.

The step that matters

Boil gently for 1½ hours. A gentle simmer keeps the meat tender and the broth clear. A rolling boil toughens the muscle fibres and makes the liquid cloudy and greasy.

Swap the peas

How well each one fits the dish's main ingredients (carrot, mutton, pepper, parsley):

  1. Chickpeafits better
  2. Beansfits better
