Rice Boiled for Curry

Ingredients

Directions

  1. Wash the rice well two or three times in cold water to remove the raw taste.

  2. Pick out discolored grains.

  3. Add the rice to plenty of fast-boiling salted water.

  4. Boil quickly until a grain feels tender when pressed between your thumb and finger, about 15-20 minutes.

  5. Do not let it boil into a pulpy mass; keep the grains separate.

  6. Drain in a colander and rinse with cold water for a minute or two to separate the grains.
