Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Celery
Forms the main body of the dish and becomes tender during slow stewing.
Flour
Thickens the stock into a smooth gravy as it heats.
Butter
Adds richness and helps the flour blend smoothly into the sauce.
Milk
Adds creaminess and mild sweetness to the sauce when used.

The step that matters

Thicken the gravy with flour and butter. Flour must be cooked in fat before or as it meets the liquid, otherwise it clumps and stays starchy. Adding it to hot stock while stirring keeps the sauce smooth.

Swap the celery

How well each one fits the dish's main ingredients (flour, butter, pepper, milk):

  1. Cinnamonfits better
  2. Nutmegfits better
  3. Cardamomfits better
  4. Celerythe original

Fit is the average pairing score against flour, butter, pepper, milk. Candidates are from the same food group and used in at least 100 recipes.
