What each ingredient does

Spanish chestnuts
Starchy base that softens when simmered, giving the soup its body and thickness.
Stock
Cooks the chestnuts and makes up most of the liquid, carrying the soup's savory flavor.
Rich cream
Adds fat and richness, giving the soup a smoother, silkier mouthfeel.

The step that matters

Simmering the chestnuts until they break easily. Chestnuts must be fully softened before mashing and sieving; undercooked starch stays grainy and gives a coarse, uneven texture.

Swap the chestnut

How well each one fits the dish's main ingredients (mace, cream):

  1. Pistachiofits better
  2. Almondfits better
  3. Walnutfits about as well
  4. Chestnutthe original

Fit is the average pairing score against mace, cream. Candidates are from the same food group and used in at least 100 recipes.
