Prepare the fish by shelling and cleaning it.
In an enamelled saucepan, combine the fish with 3 ounces of butter and your choice of spices.
Heat the saucepan gently by the side of a fire, shaking it occasionally to mix the seasoning.
Do not allow the mixture to boil; heat until the butter is nearly simmering.
Remove from heat and let the fish sit in the saucepan for a few minutes.
Mould the fish into small round cups and serve dry or with a rich white sauce colored with lobster coral around them.
