Excellent Horseradish Sauce

Ingredients

Directions

Prepare

  1. Wash and wipe the horseradish, then scrape off the outer skin and grate it finely.

  2. In a bowl, mix the grated horseradish with salt and cream until well combined.

  3. Stir in the vinegar, using chili vinegar if the horseradish is mild.

Heat the sauce

  1. To heat the sauce, place it in a clean saucepan over low heat, stirring continuously until just before simmering. Do not let it boil to avoid curdling.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Horseradish
Provides the sharp, pungent heat that defines the sauce.
Cream
Adds fat and body, softening the bite of the horseradish.
Vinegar
Adds acidity that sharpens flavour and balances the cream.

The step that matters

Heating without boiling. Cream-based sauces can curdle when boiled, so heating gently with constant stirring until just before a simmer keeps the sauce smooth.
