Ingredients

Directions

Prepare

  1. Wash and scrub the potatoes clean with a hard brush.

  2. Rinse the potatoes well and arrange them compactly in a saucepan.

Boil and cook

  1. Cover the potatoes with cold water and bring to a boil.

  2. Add ¼ teaspoon of coarse sea salt for every quart of water.

  3. Simmer the potatoes until nearly done, then boil rapidly for the last 2-3 minutes.

  4. Check for tenderness by probing with a fork.

Drain and serve

  1. Drain the water immediately and lift the lid to let steam escape.

  2. Place the potatoes on a trivet or by the side of the fire until moisture evaporates.

  3. Peel and serve quickly, either in a hot napkin or a covered dish to allow steam to escape.

What each ingredient does

Potatoes
Form the entire dish; their starch softens into a tender, fluffy interior when cooked through.
Coarse sea salt
Seasons the cooking water so the potatoes take on a little flavour as they cook.

The step that matters

Drain and let the steam escape. Leaving potatoes wet or covered after draining traps moisture, making them soggy. Letting surface water evaporate keeps them dry and fluffy.
