A Good Ground Rice Pudding

Oven, in the book's wordsA very gentle oven

Ingredients

Directions

The book says “a very gentle oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Make the custard

  1. Mix the ground rice with ½ cup of milk until smooth.

  2. Pour the mixture into 1 cup of boiling milk, stirring constantly for 10 to 12 minutes over gentle heat.

  3. Add the butter, sugar, and salt, stirring until combined.

  4. Remove from heat and stir for a few minutes to prevent hardening.

  5. Quickly mix in the egg yolks, egg whites, lemon rind, and brandy.

Bake and serve

  1. Prepare a buttered dish with a border of pastry.

  2. Pour the pudding into the dish.

  3. Drizzle the pudding with clarified butter.

  4. Moisten the pastry edges with cold water.

  5. Dust the pastry edges with sugar.

  6. Bake in a 300°F (150°C) oven for 45 minutes.

What each ingredient does

Ground rice or rice flour
Thickens the milk into a smooth, set pudding texture as it cooks.
Egg yolks
Enrich the custard and help it set firm during baking.
Egg whites
Add airiness and help lift the pudding's structure as it bakes.
Butter
Adds richness and a smooth, tender mouthfeel to the pudding.
Sugar
Sweetens the pudding and helps brown the surface and pastry edges.
Milk
Forms the liquid base that the rice thickens into a custard.

The step that matters

Stirring the thickened mixture off the heat. Ground rice thickens as its starch swells, and stirring after removing it from heat keeps the mixture smooth and prevents it from hardening. Adding the eggs quickly keeps them from scrambling in the hot mixture.
