Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the batter and add structure and richness as they set in the pan.
Flour
Provides the starch and gluten that give the pancakes their body as they cook.
Milk
Supplies the liquid that hydrates the flour and keeps the pancakes moist.

The step that matters

Stir the batter each time before pouring. Flour and other solids settle to the bottom of a thin batter, so without stirring the later pancakes come out with less flour and a different texture and colour.

Swap the ginger

How well each one fits the dish's main ingredients (egg, flour, milk, nutmeg):

  1. Cinnamonfits better
  2. Cardamomfits better
  3. Allspicefits better
  4. Gingerthe original

Fit is the average pairing score against egg, flour, milk, nutmeg. Candidates are from the same food group and used in at least 100 recipes.
