A Charlotte

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Cut thick slices of bread, about ½ inch thick, and butter them generously on both sides.

  2. Butter a deep dish or pan and cut the bread slices to fit the bottom and sides of the dish.

  3. Reserve a few slices to cover the top and soak them in custard, making just enough to soak them up.

Assemble and bake

  1. Fill the dish with apples or other fruit, adding sugar and cloves if desired.

  2. Cover the top with the soaked bread slices, dot with a few bits of butter, and place a plate on top with a weight.

  3. Bake in a moderate oven at 350°F (175°C) until done, then turn it out of the mold.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Thick slices of bread
Form the crisp, golden structure that holds the dish together and shapes it.
Butter
Adds richness and helps the bread brown and crisp in the oven.
Apples or other fruit
Provides the moist, sweet filling that softens as it bakes.
Sugar
Adds sweetness and helps the fruit caramelize slightly.

The step that matters

Soaking the reserved bread in custard. Bread that is over-soaked turns soggy and falls apart, while under-soaked bread stays dry. Using just enough custard lets the slices absorb liquid and set into a cohesive top layer.

Swap the clove

The recipe marks clove as optional. How well each one fits the dish's main ingredients (bread, butter, apple, sugar):

  1. Cinnamonfits better
  2. Nutmegfits about as well
  3. Clovethe original
  4. Gingerfits about as well

Fit is the average pairing score against bread, butter, apple, sugar. Candidates are from the same food group and used in at least 100 recipes.
