Giblet Pie

Why it works: Onion and pepper are a kitchen classic. They rank in the top 11% of all ingredient pairs, and 68,474 recipes mention both. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Giblet Pie

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the giblets

  1. Clean the giblets thoroughly.

  2. Stew the giblets in a little water with onion, sweet herbs, and cayenne until cooked.

  3. Cut the gizzard into 3-4 pieces and the liver into 2 pieces.

  4. Season with salt.

Assemble and bake

  1. Prepare puff pastry and line the sides of a pie dish.

  2. Place the chopped rump steak at the bottom of the dish, then add the giblets.

  3. Cover with more pastry and bake at 400°F (200°C) for 2 hours.

Finish with gravy

  1. Use the giblet cooking liquid to thicken with butter and flour, and add it hot after baking.

Butter and flour share little aroma chemistry, yet 124,287 recipes mention both: they likely work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Giblets from goose or duck
Provide the main meat and rich flavor of the filling.
Rump steak
Adds meaty body and savory flavor to the filling as it cooks.
Puff pastry
Forms a flaky, crisp crust that encloses the filling and browns in the oven.
Butter
Enriches the gravy and, with flour, helps it thicken smoothly.
Flour
Thickens the giblet cooking liquid into a gravy with body.

The step that matters

Thickening the gravy with butter and flour. Cooking the flour in butter before adding the liquid lets starch granules separate and swell evenly, so the gravy thickens smoothly without lumps. Adding it hot keeps it fluid for serving.

Flavor stand-ins for the onion

How well each one fits the dish's main ingredients (pepper, butter, flour):

  1. Shallotbetter flavor fit
  2. Chivebetter flavor fit
  3. Capsicumbetter flavor fit
  4. Onionthe original

Fit is the average pairing score against pepper, butter, flour. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
