What each ingredient does

Broccoli and cauliflower
Firm florets form the bulk of the pickle and keep their crunch through the brining.
Curry powder
Infused into the vinegar to give the pickle its main flavour and aroma.
Vinegar
Acidic base that preserves the vegetables and carries the curry flavour into them.

The step that matters

Wipe the vegetables dry. Surface water dilutes the vinegar and weakens the pickle, and brine residue can make the vegetables taste overly salty, so the florets should be dry before they go into the pickle.

Swap the broccoli

How well each one fits the dish's main ingredients (cauliflower, vinegar):

  1. Cucumberfits better
  2. Radishfits about as well
  3. Mustardfits about as well
  4. Broccolithe original

Fit is the average pairing score against cauliflower, vinegar. Candidates are from the same food group and used in at least 100 recipes.
