Chestnut Soup

Ingredients

Directions

Prepare the chestnuts

  1. Remove the outer rind from the chestnuts and soak them in warm water until it's too hot to touch.

  2. Peel the chestnuts quickly and place them in cold water.

  3. Weigh out ¾ lb of chestnuts for each quart of soup.

Make the soup

  1. Cover the chestnuts with stock and simmer gently for about 45 minutes, until they break easily with a fork.

  2. Drain the chestnuts and mash them smoothly or pound them with a strong spoon.

  3. Pass the mixture through a fine sieve and gradually mix in the stock.

  4. Season with mace, cayenne, and salt, stirring often until it boils.

  5. If desired, stir in up to ¾ pint of rich cream before serving.

What each ingredient does

Spanish chestnuts
Provide the starchy base that softens and thickens into a smooth, body-rich purée.
Good stock
Supplies the liquid that cooks the chestnuts and carries the soup's savoury flavour.
Rich cream
Adds fat and richness, giving the soup a silkier mouthfeel and softer flavour.

The step that matters

Simmering the chestnuts gently until they break easily with a fork. Chestnut starch needs sustained, gentle heat to fully soften; a hard boil can break the nuts unevenly and leave lumps or a grainy texture after sieving.

Swap the chestnut

How well each one fits the dish's main ingredients (cream, mace):

  1. Pistachiofits better
  2. Almondfits better
  3. Walnutfits about as well
  4. Chestnutthe original

Fit is the average pairing score against cream, mace. Candidates are from the same food group and used in at least 100 recipes.
