  4. Beat the egg white and mix it with 1 pint of cold water, then whisk the mixture together.

  5. Pour the egg mixture over the isinglass.

Make the jelly

  1. Heat gently, stirring until scum forms.

  2. Boil for 2-3 minutes.

  3. Skim the mixture.

  4. Strain the mixture.

  5. Color half of the jelly with prepared cochineal.

  6. Leave the other half pale.

  1. Fill orange rinds with alternating stripes of the two jellies.

  2. Once set and cold, cut the jellies into quarters.

  3. Arrange the quarters on a dish.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Isinglass
Sets the liquid into a firm jelly as it cools.
Egg white
Clarifies the liquid by trapping impurities that rise as scum for skimming.
Oranges
Provide the main juice, flavor and aroma of the jelly.
Lemons
Add acidity that brightens the sweetness of the orange juice.
Cochineal
Colors half of the jelly a deep red.

The step that matters

Heat gently, stirring until scum forms. Heating too fast or stirring late can break up the egg white scum so impurities stay suspended, leaving a cloudy jelly instead of a clear one.

Swap the orange

How well each one fits the dish's main ingredients (lemon, egg):

  1. Orangethe original
  2. Limefits about as well
  3. Raspberryfits less well
  4. Blueberryfits less well

Fit is the average pairing score against lemon, egg. Candidates are from the same food group and used in at least 100 recipes.
