Why it works: Parsley and capers match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 1,550 recipes. Both carry coumarin, which smells sweet, hay. The science ↓
Fillets of Soles in Aspic
Ingredients
Directions
Cut the fillets of soles as for cutlets and sauté them until white and free from grease.
Arrange the fillets around the inside of a mold or on a serving dish.
Place a small salad or lettuce in the center, chopped aspic around, and thin cucumber slices as a border.
Cut skate into pieces and fry in oil with parsley, sliced onion, and sweet herbs until cooked.
Pour off the fat, then add vinegar and water to the pan, stirring with the herbs.
Dredge with flour until a good consistency is reached, then add capers before serving.
