Why it works: Onion and garlic match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 29,058 recipes. Both carry furaneol, which smells caramel, strawberry. The science ↓
Fillets of Turbot
Ingredients
Directions
Cut the leftover turbot into nice-shaped pieces and place them in a dish or sauté pan.
Add the white stock to the pan.
Blanch and remove gills from the oysters, then add them to the prepared sauce and boil for a few minutes.
Pour the oyster sauce over the fish.
In a fish kettle, combine water and wine.
Add sweet herbs, onion, garlic, peppercorns, carrots, turnips, butter, salt, and cayenne pepper to the kettle.
Simmer for 30 minutes, then strain the mixture and let it cool.
Boil the turbot for 20 minutes and garnish with lobster sauce.
Serve with sliced and dressed cucumber.
