Directions
The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.
Wash the potatoes and place them in a saucepan. Cover with water and add a handful of coarse sea salt.
Heat until just boiling, then remove from heat and let them finish cooking without boiling.
Peel the potatoes and mash them with milk and 2 ounces of butter. Season with cayenne pepper and salt.
Spread a layer of mashed potatoes on the bottom of a dish.
Lay slices of rare beef closely together on top of the mashed potatoes.
Pour 2 tablespoons of gravy over the beef and cover with another layer of mashed potatoes.
Bake in a slow oven at 300°F (150°C) for 45 minutes.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
