Baked Marrow Bones

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Prepare the marrow bones as previously instructed.

  2. Place the bones in a deep dish.

  3. Bake in a 300°F (150°C) oven for two hours.

  4. If using batter, remove the marrow from the bones and place it in buttered paper cases.

  5. Pour the batter over the marrow and bake until done.
