To Scald a Sucking Pig
Ingredients
Directions
Plunge the pig into cold water immediately after killing it and let it soak for 5 minutes.
Rub the skin well with pounded resin.
Plunge the pig into a tub of scalding water for 30 seconds.
Remove the pig and take off the hair; if it doesn't come off easily, rub it again with resin and return it to the scalding water.
Once all the hair is removed, wash the pig thoroughly with warm water, then rinse in cold water several times to remove any resin flavor.
Cut off the feet at the first joint, slit down the belly, and remove the entrails.
Set aside the heart, liver, and lights with the feet.
Wash the pig again inside and out, dry it well, and cover it with a cloth to keep it from the air.
