What each ingredient does

Bacon
Provides the main meat and fat, which softens and becomes tender as it simmers.
Bread crumbs
Finely powdered crumbs sprinkled on top add a light coating texture to the cooked bacon.

The step that matters

Soaking very salty bacon. Salt cured into bacon is drawn out slowly by soaking in soft water. Skipping this step leaves the meat overly salty once it has simmered and concentrated its flavour.
