Wild Ducks

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Pluck and wash the ducks thoroughly with warm water after drawing them.

  2. Preheat the oven to 400°F (200°C).

  3. Roast the ducks for half an hour.

  4. Slice the breast when serving and squeeze lemon juice over it.
