Lark Raised Pie
Ingredients
Directions
The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.
Make a raised crust using your preferred method.
Spread some farce at the bottom of the crust.
Place the boned larks on top of the farce, filling the pie.
Cover the pie with the top crust and bake at 400°F (200°C) until done.
Remove the top crust, drain off excess fat, and pour in a rich ragout.
Season highly and serve the pie open.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
