Stilton Cheese

Ingredients

Directions

  1. Mix the night's cream and morning milk with the rennet.

  2. When curd forms, remove it gently without breaking.

  3. Place the curd in a sieve to drain, pressing gradually until firm and dry.

  4. Transfer the curd to a wooden hoop and keep it dry on boards, turning it often.

  5. Wrap the cheese with cloth binders, tightening as needed.

  6. Change the cloth daily until the cheese is firm enough to support itself.

  7. Once the cloth is removed, brush the cheese daily for three months.

  8. If the weather is moist, brush twice daily, including the top and bottom before removing the cloth.
