Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Shin of beef
Breaks down into gelatin during long simmering, giving the broth body and a rich mouthfeel.
Knuckle of veal
Its bones and connective tissue release gelatin, adding body and depth to the broth.
Cauliflower
Adds mild sweetness and body as it softens in the simmering broth.

The step that matters

Skim off any scum that rises to the surface. Coagulated proteins and fat rise as the broth first heats. Skimming them early keeps the broth clear and free of off-flavours.

Swap the peas
