Boiled Fish
Ingredients
Directions
Fill a saucepan or fish kettle with water and bring it to a boil.
Clean the fish thoroughly under cold water.
Once the water is warm, place the fish on a strainer or plate in the water, ensuring it is just covered.
For salmon, the water must be boiling; for other fish, it should be warm.
Add enough salt to the water to make it taste salty.
Cover the saucepan and reduce the heat to simmer for 20 to 45 minutes, depending on the size of the fish.
Skim the surface occasionally while cooking.
The fish is done when the skin begins to crack.
Carefully remove the fish from the saucepan and place it on a hot dish. Serve with anchovy sauce or lemon juice.
