Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Brussels sprouts
Form the main body of the dish, cooking to a tender texture while staying green.
Butter
Adds richness and moisture when the drained sprouts are tossed in the pan.
Carbonate of soda
Raises the water's alkalinity, which helps the sprouts keep their bright green color while boiling.

The step that matters

Keep the lid off while boiling. Brussels sprouts release sulfur compounds as they cook, and a covered pan traps them, producing a stronger, more bitter smell and flavor. Boiling uncovered lets these compounds escape.
